Suggested Aromas: This wine shows ripe red berry, caramel attributes & citrus peel with a deep red berry palatte, bright acidity & integrated tannins from aging in French oak barriques.

FOOD PAIRING: Try this will dark meat turkey, pork loin or sweet potatoes.

 

RECIPE:

Nebbiolo Cheese Filets
Ready in: 40 mins

Ingredients:
 •    1/2 cup unsalted butter (softened)
 •    1/2 cup crumbled Gorgonzola
 •    3 Tbs fresh thyme (minced)
 •    2 Tbs fresh rosemary (minced)
 •    2 Tbs fresh parsley (minced)
 •    1 tsp crushed red pepper flakes
 •    2 garlic cloves
 •    1/4 cup pine nuts, salt & pepper to taste
 •    8 (8 ounce) pork tenderloin filets
 •    2 cups Vivác V. Nebbiolo wine.

Directions:
1.	Marinate meat in wine 30 mins.
2.	Preheat an outdoor grill for medium-high heat.
3.	Place the softened butter, Gorgonzola cheese, thyme, rosemary,  parsley, red pepper flakes, 
garlic & pine nuts into the bowl of a food processor. Puree until incorporated.

4. season to taste with salt & pepper. 5. Season the pork on all sides with salt & pepper. 6. Grill to desired doneness, about 5 minutes per side for medium rare. 7. To serve, top each with about 2 Tbs of the butter. Pair with: Vivác V. Nebbiolo
